Cowboy Bean Bake

Another great recipe from Veg Shed customer, Julie

Ingredients:

8 Sausages (meat or non meat - I use the Richmond non meat sausages because they keep their shape better, but use any of your favourite sausages)
2 Sliced Onions (I prefer red but you can use white if that is all you have)
1 red pepper (sliced into thin strips)
2 tins of beans (Any beans you like - red, black eye, cannelloni etc.)
1kg of fresh organic tomatoes (deskinned and crushed) or 2 tins of chopped tomatoes
1 tsp sugar
1 tsp mustard powder

Method:
Cook the sausages till brown and cool and cut up into 1 inch chunks. Put to the side.

Next saute the onions and pepper till soft, add the sugar and the mustard and the beans and the tomatoes.

Cook down and then add the sausages.

Cook down till the sauce is almost dry but has a little liquid still in it.

Serve with any bread you like. Wholesome, hearty and filling on a winters night. Add seasoning to your taste.
